"Mukhang pera" LOL

Nagsumbong ako sa asawa ko at sa mga kapatid ko about a little issue that was niggling at me. They weren't happy with my kwento but thank goodness they are wonderful people who just gave me good advice. So eto siya: I have this relative - and I love her very much - who's been saying strange things lately. The worst was, "Hindi ko nahalata na maganda ka nung bata ka kasi lagi kang nakayuko." 

Then she said that my head was always down because I looked like I was always looking for money. Then when I grew into a woman, she said, "Buti naman na nahanap mo yung perang hinahanap mo," implying I got rich through marriage.

First of all, I am not rich. Guys! I wish! I don't even know where that comes from. My friends said this relative says nasty things dahil sa inggit. Inggit siya saan? Sa yaman ko? Kelan naman ako nag-flaunt ng kayamanan?? 

Dear Loyal Readers, I know you love me because of what I write - not my affluent lifestyle, my fashionable OOTDs, my extensive travels, my Instagrammable home, my gourmet menu or restaurant reviews, my shopping extravaganzas. Wala kasi akong mga ganyan that's why I know you guys are here for me, not for what I have. 

I'm so cheap now that I cut and color my own hair! What do you think of my new bangs?

My husband says all the time I should go shopping. He'd say, "Please buy something new. Please!" Kasi when he looks through my blog and my Instagram, I wear the same old clothes again and again. My kids wear hand-me-downs or bigay ng mga brands. My things are bought second-hand on eBay or dahil may mega sale. Sabi ni Vince minsan naaawa siya sa akin haha

This doesn't bother me really, if I look poor. Kasi hindi naman totoo—I'm not poor. Cheap maybe haha Yes, I commute. I walk everywhere to save money. I use things until they're falling apart. But I can buy groceries without looking at price tags. I pay good money for good food and good service. And books and my kids' education and future. That's it. Everything else I have can look dilapidated. I just don't see the point of spending money on things I don't care about. So all this time I'm thinking na hindi ako nagyayabang ng kayamanan, right???

So who in their right mind would feel envy towards me? So it can't be envy.

It's condescension. That's what it is. 

I have a great life. I know I do. I'm so happy. My marriage is great. My kids are amazing. My dreams have all come true. I'm blessed beyond words! But instead of all these good things seen as rightfully mine, rightfully deserved, some people think I got all of them just because I married a rich man.

And that bothers me very much.

Vince will be the first to say he isn't a rich man. I find it amusing actually when he tells people, "I have a rich wife." Damn right. I work hard on my writing, editing, PR jobs, my blog, and every project that comes my way. Kung mukhang pera ang pagiging excited ko to finally cash my checks then, fine. But I deserve those checks. I earned all my money and I love it. I can't imagine why anyone wouldn't want that power that comes from earning an honest income!

Vince said that he finds it so disrespectful that people assume we're living on some fictional inherited money just because writers and editors like us could not possibly live the way we do (but we live so simply?!). It's disrespectful to him and disrespectful to me. We have our life because we worked damn hard for it. 

This isn't a new issue. I talked about this in an old blog post 9 years ago:

"But people don't see beyond my nice life. They don't see that I spent 1999 to 2009 working my ass off, working 24 hours sometimes, eating very little or skipping meals altogether, skipping doctor check-ups and maintenance meds for my asthma and endometriosis, carefully using and cleaning clothes and shoes so they will last longer, scraping together every peso and enduring the glare of bank tellers while I count out coins I saved up to deposit to my bank account, and delaying marriage and kids because I wanted to have a better life first."

I'm still working my ass off, by the way. Three mouths to feed ain't cheap. But just because I make it look easy doesn't mean I'm not working hard. I've had jobs I hated and you better believe I was miserable and I looked it. Things are different now. Because I love my work, I love working, and I love that my husband supports my career, I guess it does look like this is all a piece of cake. It isn't, but I'm happy anyway. And no one has any right to take this joy away by putting me down every chance she gets.  

I deserve everything I have. Every tiny bit. Every single thing I worked hard for—piso per fucking word. 

So I still love you, dear cousin, but this is good-bye.

What to do if you get Covid-19 (advice by a UK nurse)

I just saw this on Facebook and I wanted to share it with you! I thought it's a useful guide just in case we catch the novel coronavirus (and with the way things are going in this country and how the government isn't actually doing anything to flatten the curve, it looks like we'll all get that damn disease).

Everyone is telling us how NOT to catch #coronavirus, but NO ONE is saying what to do if you get it. Thanks to this FILIPINA NURSE in the UK for putting this guide together:

Finally, some sensible advice From a GP Nurse in the UK.

To Avoid Covid-19What I have seen a lot of are recommendations for how to try to avoid getting coronavirus in the first place:
• good hand washing
• personal hygiene
• social distancing

But what I have NOT seen a lot of is advice for what happens if you actually get it, which many of us will.
So as your friendly neighborhood nurse, let me make some suggestions:

What to Prepare
You basically just want to prepare as though you know you’re going to get a nasty respiratory bug, like bronchitis or pneumonia. You just have the foresight to know it might come your way!

Things you should actually buy ahead of time (not sure what the obsession with toilet paper is?):

• Kleenex

• Paracetamol

• whatever your generic, mucus-thinning cough medicine of choice is (check the label and make sure you're not doubling up on Paracetamol).

• Honey and lemon can work just as well!

• Vicks Vaporub for your chest is also a great suggestion.

• a humidifier would be a good thing to buy and use in your room when you go to bed overnight. (You can also just turn the shower on hot and sit in the bathroom breathing in the steam).

• If you have a history of asthma and you have a prescription inhaler, make sure the one you have isn’t expired and refill it/get a new one if necessary.

• Meals. This is also a good time to meal prep: make a big batch of your favorite soup to freeze and have on hand.

If you get Covid-19

How do you know you have coronavirus?
1. Itching in the throat
2. Dry throat
3. Dry cough
4. High temperature
5. Shortness of breath

So when you notice these things, quickly take warm water with lemon and drink (for relief and hydration). 

• Hydrate (drink!), hydrate, hydrate! Stock up on whatever your favorite clear fluids are to drink - though tap water is fine, you may appreciate some variety!

• For symptom management and a fever over 38°c, take Paracetamol rather than Ibuprofen.

• Rest lots. You should not be leaving your house! Even if you are feeling better you may still be infectious for 14 days and older people and those with existing health conditions should be avoided!

• Wear gloves and a mask to avoid contaminating others in your house.

• Isolate in your bedroom if not living alone. Ask friends and family to leave supplies outside to avoid contact.

• Sanitize your bed linen and clothes frequently by washing and clean your bathroom with recommended sanitizers.

You DO NOT NEED TO GO TO THE HOSPITAL unless you are having trouble breathing or your fever is very high (over 39°C) and unmanaged with meds. 90% of healthy adult cases thus far have been managed at home with basic rest/hydration/over-the-counter meds.

If you are worried or in distress or feel your symptoms are getting worse

Preexisting risks
If you have a pre-existing lung condition (COPD, emphysema, lung cancer) or are on immunosuppressants, now is a great time to talk to your doctor or specialist about what they would like you to do if you get sick.

Children 
One major relief to you parents is that kids do VERY well with coronavirus— they usually bounce back in a few days (but they will still be infectious). Just use pediatric dosing.

Be calm and prepare rationally and everything will be fine.

Do not keep this information to yourself only. Pass it to all your family and friends. May God bless all.

Okay, guys, I'm not a doctor who can verify if above info is correct but what's the harm with drinking water and being prepared with a few OTC meds and frozen soups? Stay safe and healthy, everyone. Quarantine rules are loosened and we now have to fend for ourselves!

Quarantine confession: I feel guilty that I'm happy

People are like water. Bruce Lee once said that water takes the shape of its container and when it gets transferred to another vessel, it takes the shape of that new container. It doesn't resist. It is fluid. It changes its shape but it is still water. In the same way, people should be like water. Be fluid. Adapt, change, make the best of where we are contained. And right now we're all contained in our homes because of the COVID-19 pandemic. 

He turned 8 while in quarantine. All he wanted for his birthday was to go out of the house.

Matapos ang mahigit na dalawang buwan ng quarantine and I've gone through so many emotions throughout all the fear and anxiety and incompetence of the government and the amazing feats of ordinary citizens and the private sector. What a summer! But now, right at this very moment and maybe for the last month, as I've adapted to the new normal, I've been really happy. But I'm afraid to say it because no one's supposed to be happy in such a terrible time.

It is still a terrible time. Namumutla na kami dahil condo-living kami ang our admin is super strict with us so my kids haven't felt sunlight on their skin this whole summer. My emotions have been wild every day. Especially at the start of the quarantine. Fear, anger, anxiety, worry, helplessness, despair. I lost my lucrative PR clients. Past clients aren't paying me so wala talaga akong pera. Buti na lang may work pa asawa ko. I'm angry at our government. I worry constantly about the future. And I'm afraid of the novel coronavirus and what it can do to my family.    

Then as the days wore on, it slowly dawned on me that I'm no longer worrying about certain things that made me unhappy. I don't wake at dawn anymore. I don't need to force my kids to eat their vegetables and take their vitamins. I don't worry about being a bad mom anymore just because my kids don't play outside or they spend too much time watching TV. I finally have time to fix and organize and clean. And for the first time in 5 years, I'm not gritting my teeth about tuition and enrolment, labeling and covering school books, and sewing name labels on uniforms. I'm finally NOT busy and it is glorious!

I have finally found time for self-care. Like, doing my own LED facials!

You know what's truly different for me? For the first time in the 10 years I've been a mommy, I am finally just here for my kids. Puttering about, cooking, cleaning, reading books with them, playing. Or not doing anything with them at all. Just letting them be kids without me hovering. So nice to just be me—not anxious mommy—just me. Full stop. 

I'm cooking every day, trying new recipes!

I still have a few writing projects to keep me occupied and that makes me happy and fulfilled. My husband is also happy I'm finally paying attention to him! He even joked that working-mom me seems to be happier being a housewife. I don't think I was an unhappy working mom. I love working! But I admit I am a lot less stressed and, well, this is nice. This is really nice.

I am super happy. I'm writing. I'm with my family. We're safe and healthy. So it is such a special time for me and my boys. Just cooped up in our home, safe from the world. It's almost magical. Like water, I have adapted to the shape of my new situation, flowed into my new container, and I may not like how I got into this state, but I like this cup I'm in.  

I know many people don't like the cup they're in. So I feel guilty that I'm happy. The only thing now that makes me unhappy is the certainty that not everyone feels the same. The world is changing in many scary ways. I'm still scared, too. So I'm extra grateful I have this little piece of heaven, made all the more precious because we don't know how long it will last.

7 Tips for Keeping Anxious Thoughts at Bay During the Lockdown

GUEST POST - In our everyday life, it's a challenge to keep anxiety at bay. It's especially challenging to not worry during this crazy and scary time. Without being able to go anywhere to change up your environment and take your mind off what is bothering you, keeping anxious thoughts at bay during the lockdown and moving through an anxious experience is critical. 

Here are 7 tips for how you can ease your anxiety during the lockdown: 

1. Establish a routine and stick to it. 
Many of us have a daily routine that was completely turned upside down when the lockdown happened. You need to set up a new routine because routines can establish a sense of normalcy through all this insanity. Sticking to it and taking comfort from the predictability of a schedule, even if it's a new one, can help ease your anxiety.

My new schedule: housewife and mom all day; writer/blogger at night.

2. Free your mind by moving your body. 
To help prevent anxiety and even while going through an anxiety attack, moving your body is especially helpful. Physical exercise is a way to use up all that nervous energy. If you are feeling anxious or restless you can, for example, distract yourself by firing up a few fitness apps you can use with dedicated challenges, such as a 30 Day workout challenge on 30 Day Fitness, as well as HIIT workouts you can do in your home or garden. 

3. Keep your space clean and tidy. 
Your physical space can be a physical representation of anxiety or stress. Clutter can exacerbate feelings of anxiety and overwhelm, as you feel that there is "so much." Keep your space clean and tidy for your mental health. As you clear the physical clutter, you can help to reduce the mental clutter, too! 

4. Try meditation. 
Meditation is a helpful practice to help reduce anxiety and to ground yourself. There are many apps available, such as Insight Timer and Headspace, which give you the option of guided meditations, music, courses, etc. You can also simply practice deep breathing and focusing on your breath.

5. Do not obsess on news coverage. 
The news these days is really upsetting. From incompetent government response and the mounting death rate all over the world to COVidiots who still defend their corrupt leaders and think that the pandemic is a hoax, the coverage is definitely anxiety-provoking. While it is important to be informed, reading numerous articles about the same thing or reading the ‘fear’ stories can really take their toll on your mental health. Choose to only read news from credible media and to limit your exposure to it by turning off social media and doing something else.

6. Find a creative pastime. 
Creativity is a wonderful outlet for all that energy. A common phrase you’ll hear from artists is that their art is where they "get it all out." Your creative pastime is not something you have to be a professional in, but rather one that you enjoy to let your creativity out and get in a state of flow. For example, you could try painting, sketching, writing, photography, crafts, and even rearranging your home dĂ©cor

I've been cooking, learning how to shade and sketch, and play the piano.

7. Stay together even as you stay apart.
One sad thing about the novel coronavirus is it isolates us from our family and friends. When you feel alone during a scary time, this can add even more stress. It's crucial therefore to maintain contact and connection with your loved ones. Call them up, chat over Messenger, do Zoom calls, or send thoughtful emails.

My Mother's Day gift to myself: health and wellness

My biggest surprise this year—well, aside from the fact that the whole world stopped because of the novel coronavirus—is I finally started exercising and eating better. The pandemic had a huge hand in it, of course. After decades of health and fitness resolutions that I never get to keep, there's nothing like the very real threat of death that finally pushed me to sweat it out.


It was also easier for me to find time to exercise because we're all stuck at home with nowhere to go to. That's like 4 hours of my life usually spent on the road in traffic now suddenly free! Well, I still have to use those same hours to run my household, care for the kiddos, and work, too. On one hand, it's been less stressful having nothing to worry about and rush to, but on the other hand, it's benn more anxiety-ridden as I try to be “everything” to everyone — cook, laundrywoman, cleaning lady, rule maker and enforcer, teacher, playmate, storyteller, disciplinarian. Everything!

AHEAD: Ensuring Quality Education and Learning During COVID19 and Beyond

PRESS RELEASE - After months of class cancellations, we now ask ourselves, how will learning look like in the new normal? How do we ensure the quality of education during and even after these uncertain times?

Not invisible

This was in my drafts folder, in 2016. I don't know why I never published it but here it is because it made me happy reading it now, the day before Mother's Day of such an extraordinary year. It's such an ordinary story and I want to remember it forever.

* * * * * * *
"You're just like our youngest boy."

My husband Vince declared this yesterday while our toddler woke up languidly from a long nap.

"What do you mean?" I asked.

"You stretch when you wake up," he replied. "There," he nodded towards our youngest boy. "Just like that."


Later at dinner, Vince added, "He is really just like you. He's stubborn like you. He's cute like you." He said this while he was spooning chopseuy onto his plate, matter-of-fact, absorbed in his dinner, very casual, no gooey eyes. Like he was saying, Just sayin'.

Later in bed, I realized with a start that Vince watches me. And so I kinda went a bit panicky, aware I've let myself go since we had kids. I'm 25 lbs heavier since the day we met. I'm all stretched out in the tummy area. The boobs and butt areas, too, if I'm going to be honest. I dress for comfort not for style or sex. I'm a mom now and this mom is usually busy and exhausted and annoyed and exasperated. What does he see? Does he like what he sees?

Well, he said I'm cute like our toddler. I don't know if 40 and cute go together but he still enjoys being with me, talking with me, and apparently looking at me, too. After almost 18 years together, he still looks at me. He still looks at me! He still sees me, he still wants to know me. And he still loves me.

And then I remembered all those times I rushed past him, on the way to a crying, needy, demanding, angry, hungry, sleepy, poopy, sick, or whatever-it-is-this-time child; and all those times he said he wanted to chat and I said, "I'm tired;" and all those times I was so busy working I didn't even look up from my computer when he said, "Hi." I remembered and I wondered if he hopes I see him, too.

Because I do. I do! I always think of him whatever I do. I always look at him, too, when I can, when I'm not looking down at the kids, the chores, the work. I wonder if he doesn't see that I see him the way I don't see that he sees me.

My heart is feeling tender now. My husband still sees me. I don't even care now if he likes what he sees. The fact that he's still looking means he still cares (and he must still like what he sees!).

What it's like to be quarantined in CĂ´te d'Azur in the South of France

Many years ago, before AirBnB, my friends and I joked that each of us should buy a house in a different country so we can stay over there for holidays and we won't need to spend on hotels. Well, it's come true. They have scattered with the wind save for me, still here in Manila. Thank goodness for social media and messaging apps, we can keep tabs on each other!

Like us, my friends are also quarantined in their little spot on the globe. I still can't believe it, how all over the world, we are fighting this COVID-19 pandemic together. It suddenly makes the world such a small place. My friend, Nicole, suggested I share how people's lives are like everywhere during this strange time. It was a fantabulous idea! It will make us feel less alone in our cooped-up existence by making us virtually visit someone far away. I hope you agree!

So today, let me introduce you to my friend, Nicole. If you're a Loyal Reader, you must've spotted her here and there in old blog posts. We became friends while working as magazine editors. Nicole was the super chic and talented beauty editor of Cosmopolitan before becoming the freelance beauty editor of OK! magazine. These days, she's not on my blog anymore because I haven't seen her in years since she married and moved to the South of France. She is delightfully happy and soooo in love these days. I can imagine how lovely it must be to be required to be stuck at home with the love of your life in such a gorgeous place as CĂ´te d'Azur! Here's what her life's like:

What are your lockdown rules specifically?
The lockdown rules in France are pretty much the same for the whole country. The only difference (that I am aware of) is that a few cities require you to wear a mask or implement certain curfews. 

Whenever we go out, we have to prepare a form called the Attestation de DĂ©placement DĂ©rogatoire. It's like a permission slip where you have to enter your personal details and indicate the pre-approved reasons for going out: essential work, groceries, exercise, to walk your dog, urgent family matters like if you’re sharing custody of children, medical appointments, etc. The attestation can be handwritten, but if it’s printed or filled up on your phone, then it comes with a QR code that can be scanned at checkpoints. If you don’t respect the rules, you get a €135 fine for the first offense.

How is your town taking to the lockdown? 
I think everyone is doing the best they can. At 8 p.m., people gather by their windows to pay tribute to the frontliners—you’ll hear clapping, random trumpet playing, dance music, occasional fireworks, and even boats blaring their horns. The only thing that’s strange to me is that I see a lot of people walking around and even kids playing outside without masks. But our town started distributing them for free to encourage residents to wear them and you can also buy masks at groceries and pharmacies now, so hopefully this will change. 

How do you get your food? 
My husband goes to the grocery every two weeks. So far, the stock situation has been fairly good and there are delivery options available. Our local market and some restaurants have also opened for takeout recently. But I think the funniest thing I noticed was that a lot of people were ordering wine for pickup from one of our neighborhood restaurants. Of course, the French need their wine!

You can go out! Whyyyyyy??? 
Everyone is allowed to go out for exercise once a day for one hour and within one kilometer of your home. We’ve been on strict lockdown since March 16, but we only started going out for short walks towards the end of April since we wanted to stay home as much as possible. But now that masks are more available and the weather is warmer, we take walks on paths where we run into less people maybe 2-3 times a week. It's been good for our sanity! 

What will you do once lockdown lifts? 
Since we live near the sea, I find myself daydreaming about going on a nice picnic and taking a dip in the ocean. I definitely hope I can visit Manila again soon because it’s unnerving when you don't know when you'll be able to see your family again! But I try not to think about these things too much since everything is so unpredictable anyway. I just take it a day at a time and try to appreciate the simple things. As long as everyone is healthy and safe at the end of the day, that’s all that truly matters.

What have you been doing during quarantine? 
We usually spend most of the day cooking and baking! Making bread really helped me relax and experimenting with different recipes in the kitchen made us both happy. I tried studying a little French and did some yoga a couple of times a week, but it never really stuck. So I switched to crocheting while he'd watch a series on Netflix or catch up on the news. After dinner, we turn off our screens and play a game of cards, Monopoly Deal, backgammon, checkers—something old school. And of course, there's Instagram, Facetime calls, and lots of texting with friends and family. Making videos for those with birthdays in my family actually became a trend, so I think we also made at least four or five of those. My husband also learned to cut his own hair! I'm hoping I can teach him how to give me a manicure next! Haha!

Gosh, I miss this woman. Nicole's quarantine diary sounds dreamy — I'm looking forward to spending time at her place instead of an AirBnB! But even she lets slip that there is anxiety for the uncertain days ahead for all of us. Well, we can choose to despair or we can make our shuttered life at home beautiful, safe and heavenly for us and the ones we love just like Nic did!

A joyous labor: Jennifer Lopez on the necessity of working and how she deals with working-mom guilt

Even though I follow @jlo on Instagram, it's only now that I saw her videos for the Coach Spring 2020 campaign called "Originals Go Their Own Way". At 50 years old, Jennifer Lopez is having a really good year (good for her) that kicked off with her jaw-dropping performance at the Super Bowl, nominations for her role in Hustler, and her numerous brand endorsements. And yet, as her famous song goes, she's still Jenny from the block and her every interview just shows a woman who is warm and funny and real. Which is exactly what I want to always be!

I'm loving her little NY Minute interviews for Coach. This one, where she talks about being a mom, is especially inspiring for me as a working mom.



The best thing that happened to Jennifer is not her phenomenal career. It was her twins, Max and Emme. I remember covering this story for OK! magazine way back in 2008. As the editor, I was hell-bent on getting the photos and exclusive interview. And we got it! It was a beautiful feature but one I—as a newlywed with no desire for kids—didn't understand.

Now that I have my own kids, I can appreciate Mommy JLo better. She says in her Coach video, "Your whole perspective on the world changes.  It's all about [the kids]—how you can be better for them, how you need to be better for them. [With] my type of work, I'm lucky that I can have [my family with me]. Because when they're there, they empower me to soar. I want to make them proud."

For Jennifer, being better means never getting complacent, which kinda stung because I wasn't dreaming anymore. I've already had my dream career come true before so I believed that I can't get greedy. I'm lucky I had that. Now I can be a nobody, just be there for my family, dream for them not for myself. But what JLo said stirred something in me. The old me. Perhaps the real me. I want to dream again! I want to conquer something again!

And if the new dreams make life as a mommy harder? Jennifer says, "I think they wish I didn't work as much but I think they also appreciate all they have because of it. Just like anybody's life, it's not perfect but we make the best of it. Just like every working mom... there's not just enough hours in the day sometimes but it's a joyous labor making it all happen."

A joyous labor. I love it! I finally have the words to describe what motherhood is. It's so succinct. So perfect. Motherhood is hard work and the work never ends. But it is also joyful and though we're exhausted all the time, we can't imagine life without this joy.



Here's Jennifer being interviewed by People magazine's Jess Cagle in 2017 [full interview here]. He was asking her about her comeback way back in 2011, when she was a new mom and she was 42 years old (ancient in Hollywood) but that was when she launched her mega-successful album LOVE? and invaded homes everywhere as a judge on American Idol. Jennifer said she was a new woman and the world needed to see the new JLo. "Here's what changed in my life: I had given birth. I had given birth and the kids honestly gave me a new direction. They just made me realize what was real and what wasn't real... They just changed everything."

And instead of feeling, as I did, that motherhood means retreating from the world, for JLo, it meant conquering it. She said, "It's true! There is a thing that happens and 'On The Floor' honestly was me [going]: 'Get back out there. You're an animal. You're a beast! Pull up your panties and get back out there!'"

"Here's what happened: I had the kids, and I started working on some more music and I started thinking about life in a different way. Like I said, I started asking more questions of myself, of love, of what was right and what was wrong, all because I wanted their life to be great, too. And I knew for their life to be great, my life had to be great. I had to fix some things."

And boy did she fix things. Actress, singer, dancer, fashion designer, producer, author, and businesswoman. And mother! Jennifer does all that she does while she's a devoted mother. I am so inspired! Of course I'm aware our situations are different. I know I'd be able to work better if I had household help, for instance. But just dreaming again is a big step, I think! I want to do something again apart from motherhood, for myself really, that my kids will see and be proud of. 

As moms, we all know our children are our priority. That's a given. It's so easy to get lost in motherhood, however, and we forget we are more than moms, that we were someone before we became moms, that we can be something else, too, while we are moms. It's been a struggle for me to go beyond motherhood because it's easier for me to focus on just one thing. But I want to always push myself to work. For my own fulfillment, yes, but also for my boys. I need my sons to see me as more than their mama, because that will color how they see women for the rest of their life. I need them to see women as more than just a devoted wife and a nurturing mother, but as a fully realized human being with dreams and goals and ambition and drive and power. 

That is my joyous labor. I'm so excited! Now let's dance to some 20 years of JLo tunes!

Homemade recipe: Atsarang talong (pickled eggplant)


I shared this photo on my social media last week and even though I said it looks horrible, I got a lot of requests for the recipe. Apparently, there's a lot of us who love eggplant! Yes, this is atsarang talong, a.k.a. pickled eggplant. The great thing with pickling is you can pickle any vegetable. So if you have lots of veggies and don't know what to do with them, pickle them!

Atsarang Talong (or Pickled Eggplant)

2 eggplants, sliced into strips (I used the long Pinoy eggplants)
2 tbsps salt for water
water for boiling
1 small red onion, thinly sliced
1 red bell pepper, thinly sliced
3 garlic cloves, thinly sliced
1/3 cup vinegar
1/4 cup olive oil
1 tbsp sugar
2 tsps salt

1. In a pot, pour enough salted water to cover eggplants. Boil for 10 minutes.
2. Drain eggplant slices.
3. Combine eggplant slices with the rest of the ingredients.
4. Marinate overnight.
5. Eat with happiness!!!

The great thing with atsarang talong is the unique smoky-sweet flavor of the eggplant that balances out the sourness of the vinegar. It tastes amazing! My husband, who has known me for 2 decades, was pleasantly surprised that I knew how to pickle stuff (thanks, Home Economics 101!). He was so happy with this recipe! It tastes great as a side dish to pork chops, adobo, fried fish, pork barbecue, anything inihaw. Try it, too!
